Maltose
Chemical Formula:
Synonyms
Malt sugar,
Diglucose
Description
White, odorless, sweet-tasting powder.
Maltose is a
disaccharide, two simple sugars in one molecule.
In maltose, the two sugars are both glucose.
Uses
Maltose is an easy to digest carbohydrate, and is used in
infant formulas, and in making beer.
Chains of glucose molecules form starches and pectins, and when
those are broken down by enzymes, mixtures of glucose, maltose,
and maltodextrins are formed, which are all just shorter chains
of glucose.
